Hi Patrick,
Have you used completely deodorized cocoa butter? I have tried both regular and deodorized cocoa butter and the difference was huge.

I have no doubt your recipe tastes good. However I find your 2 stars review a bit harsh, especially considering the fact we even note in the Tips that you can replace the cocoa butter with deodorized coconut oil if you don’t want any hint of cocoa butter flavor. We even mention that this ice cream has a subtle cocoa butter aroma, so it shouldn’t be a surprise.

I have used non-deodorised cocoa butter in ice cream recipes in the past, and found the flavour to be over powering. I was persuaded by this recipe to use deodorised cocoa butter, which I did. I found the flavour of the base no less cocoa butter flavoured. I have had much more success with the following ingredients which produce a creamy, ‘scoopable’ ice cream:
• 180ml soy milk
• 1 tbsp tapioca flour
• 500ml soy creamer
• 50g raw caster sugar
• ¼ cup glucose
• 1 tbsp vanilla bean paste
• 2 tbsp vodka
• 3g Prohot stabiliser

The brand doesn’t really matter, and I don’t always use the same. Sometimes Alpro, sometimes other brands.
Regarding the lecithin, I use powdered soy lecithin.

I use store-bought unsweetened soy milk. You cannot taste it in the final product. I guess if you were to use homemade soy milk, you would probably taste it though.
